Grilled Pizza Dough (n.b. 1/8 cup == 2 tbsp) 6 grams dry yeast 180 grams water 275 grams flour 6 grams sugar 4 grams salt 14 grams olive oil Stir yeast into water, let sit for 10-15 min. Mix flour and salt. Slowly mix in water and oil by turns. If not doughy, add water by tablespoons. Knead until smooth and slightly sticky. Put in oiled bowl under damp dish towel, let sit until doubled (~1hr). Punch down and divide into fourths. Roll out using a rolling pin. Heat grill to medium. Brush one side of a pizza with olive oil and place on the grill. Close the lid for a few minutes. Pull it off when the downward side is browned. Oil the other side of the dough, and make the pizza on the cooked side. Return the pizza to the grill to finish.
