Pork loin is tasty and cheap. Make it like this. Both recipes are for a half pork loin (about 2.5lb). 1. Garlic oregano marinade/rub 6 cloves garlic, crushed and minced 2 tbsp olive oil 1 tbsp dried oregano 1 tsp paprika 1 tsp salt Combine in a food processor or blender and puree. Rub pork with mix, wrap with plastic or put in a plastic bag. Let sit in the fridge for at least half an hour up to a full day. 2. Honey dijon marinade 1/6 cup honey 1/6 cup soy sauce 1/6 cup dijon mustard 1 tsp each garlic powder, thyme, rosemary Whisk together. Place pork in a sealable plastic bag and pour most of the marinade over it. Reserve a little. 5 minutes before baking is finished, brush with remaining marinade so that it glazes up nicely. Serve with any excess. 3. Roasting Oven to 425F, roast until middle temperature reads 145F (45ish minutes).
